It is a difficult thing, figuring out how much to sample from life\u2019s buffet. Our first instinct might be to want it all, to pile our plates and perspectives with every variety of delicacy, to forget the word \u2018no\u2019 and mouth the word yes until it becomes a mantra or a koan, layered into our larynx. “More life,” Falstaff famously declares in Henry IV Part I, and maybe it\u2019s the same with us; there is no such thing as too much, and everything seems not nearly enough. <\/span><\/p>\n

We read books and watch movies and maybe even fall in and out of love because we seek wider worlds as antidote to the outrage that we will only live a negligible number of years in a vanishingly small set of places. Variety won\u2019t deliver immortality, but at the very least it can make things interesting along the way. Reaching for experience, the urge for more and different. It\u2019s why our eyes move side to side, as well as up and town.<\/span><\/p>\n

And yet, it is not always clear that abundance is an absolute good. Today\u2019s chapter, which covers the laws of <\/span>kashrut<\/span><\/em>, suggests the virtues of curatorship, of this and not that. It argues for the proposition that distinction delivers meaning, and that there is something magisterial about choice. \u201cThese are the creatures you may eat from among all the animals that are upon the earth\u201d pointedly juxtaposes what is allowed from a whole universe of possibility, all that infinitude of things that fly and walk and swim through the unplumbed depths. Debates about the reasons for these distinctions or why some fish or fowl was chosen miss the larger mark. Once selection is naturalized, what goes where is largely commentary. Today, it is understood that food is aesthetics and politics; do it for the globe, or the #gram. We are connoisseurs, each in our own way, of the contaminated along with the pure.<\/span><\/p>\n
